Z2. Easter Cookies


Make eating a little more fun this Easter with rainbow cookies! These aren’t any ordinary cookies; they are cookies with 3 different colors! It is basically a cookie sandwich with frosting in between. This next recipe yields about 18 servings, takes about 50 minutes to prep and 1 hour and 30 minutes total cook time. To make these awesome cookies you will need: 1 pouch of Betty Crocker sugar mix, softened butter or margarine, Gold Medal all-purpose flour, an egg, 3 different food coloring, granulated sugar by your desire, and a dub of Betty Crocker whipped vanilla ready-to-spread frosting. And now let’s learn how to make these! 
 
Step 1: Heat the oven to 375 degrees. While waiting for the oven to heat up you can make the mix. 

Step 2: Stir the cookies mix with, ½ cup of butter, ¼ cup of flour, and one egg into a medium bowl until dough is formed. Then divide the dough evenly among 3 bowls. Then you can tint each bowl by putting in a few drop of food coloring to the dough.

Step 3: Now shape 1/3 cup of each dough into a rope about 5 inches long and 1 inch diameter. Then place the ropes side by side and a little more than ¼ inch apart on a floured surface; roll into ¼ inch thick.

Step 4: Then cut with 2 to 2 ½ inch egg shaped cookie cutter so that each cookie has 3 colors. Then sprinkle with sugar. Then you want to place at least 2 inches apart on an ungreased cookie sheet. Repeat with the remaining dough. 

Step 5: Lastly bake for 7 to 9 minutes or until the edges are lightly golden brown, and let cool for 1 minute. After cooling remove from the cookie sheet and place onto a wire cooling rack. It will take about 30 minutes to cool completely. Then you want to spread frosting on the bottom of half of the cookies. And top with remaining cookies.
