Apple Muffins


Apple Muffins are just the perfect thing for the fall. It’s super easy to make and serves up to 12 people. It takes approximately 55 minutes total with 15 minute prep time and 40 minute cook. The ingredients you will need is: cooking spray, chopped pecans, brown sugar, ground cinnamon, all-purpose flour, flour, baking soda, fine salt, canola oil, large eggs, applesauce, vanilla extract, low fat buttermilk, and one apple. How-to:

Step 1: Preheat the oven to 400 degrees Fahrenheit. And coat a 12-capacity standard muffin pan with cooking spray 

Step 2: In a small bowl, mix together ¼ cup of the pecans with 2 tablespoons of brown sugar and ½ teaspoon of ground cinnamon

Step 3: In a medium sized bowl, whisk together 1 cup of flour with 1 cu of whole wheat pastry flour, 1 teaspoon of baking soda and ½ teaspoon of fine salt

Step 4: In a large size bowl, whisk the remaining ¾ cup of sugar and ¼ cup of canola oil until combined thoroughly. After that add 2 large eggs(one at a time) whisking well after each addition. Then whisk in 1 cup of natural applesauce and 1 teaspoon of vanilla extract.

Step 5: Next whisk in the flow mixture in two batches, alternating with the ¾ cups of low fat buttermilk. Just whisk until combined. Then gently stir in the apple chunks. 

*for the apple chunks use 1 Golden Delicious apple, peeled, cored, and cut into ¼ inch pieces

Step 6: Now pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Bake until a wooden pick is inserted in the center of one of the muffins comes out clean; should be for about 20 to 25 minutes. 

                * Tap the pan on the counter a few times to remove any air bubbles.

Step 7: Let the muffins cool on a wire rack for about 15 minutes. Then run a knife around the muffins to loosen them and unmold them. 

Step 8: Cool completely on the rack
