Cheddar and Cider Fondue


Cheddar and Apple Cider Fondue would go great for an evening party snack. This recipe is an intermediate level recipe. The prep time is 10 minutes and 20 minutes cook time, and serves up to 6 servings or about 3 cups of fondue. For the fondue you’ll need chicken broth, Worcestershire Sauce, garlic, Gruyere, Vermont or New York yellow cheddar, corn starch, cayenne pepper, salt, Bourbon whiskey or apple jack which is optional along with hard cider. Instead of the hard cider you can substitute in with regular apple cider. How-to 

Step 1: Heat 1 bottle (12 ounces) of apple cider with ¾ cups of chicken broth 2 tablespoons of Worcestershire sauce and 1 clove of garlic in a medium pot of medium heat and simmer for 5 minutes. 

*For the chicken broth can either be homemade or low-sodium canned. 

Step 2: Toss ½ pound of the cheeses together in a medium size mixing bowl. 

Step 3: Sift 3 tablespoons of corn starch over the cheese and toss to coat it lightly

Step 4: Next use a wooden spoon and sprinkle some of the cheese mixture into the warm liquid and continue to stir in small amounts of cheese until it’s all incorporated and the fondue is smooth and melted. It will take about 15 minutes. 

Step 5: After that stir in 1/8 to ¼ of cayenne pepper salt and 1 tablespoon of Bourbon

                *The Bourbon is optional as well

Step 6: Transfer to a fondue pot or double boiler and serve with desired dippers. 

                *Cooked chicken and/or apple sausages, chorizo or mini hot dogs are great for dipping. Along with sliced baguette or black bread, radishes, roasted shallots, roasted mushrooms, or small fingerlings work too. Also baby potatoes, pears, apples or pretzels go great with the fondue dip!
