Roasted Acorn Squash

Roasted Acorn Squash and Garlic Mash goes great with Thanksgiving turkey dinner! It takes one hour and five minutes to cook with a 15 minute prep time. This great side dish is very easy to make and serves 4 to 6 people. To make this delicious recipe you’ll need: acorn squash, garlic, unsalted butter, leek, gala apple, salt and freshly chopped thyme leaves. How-to:

Step 1: Preheat the oven to 400 degrees Fahrenheit

Step 2: Place 2 acorn squash in a glass baking dish. Put the baking dish into the oven and pour enough water 
into the baking sheet to fill halfway up the sides. *This will help steam the squash so it doesn’t dry out, making the flesh easier to mash)

Step 3: Wrap 1 head of garlic in foil and place directly on an oven rack. 

Step 4: Roast the garlic and squash until very tender which will be about 1 hour. Then cool slightly. 

Step 5: Melt 1 tablespoon of unsalted butter in a heavy, small skillet over medium- high heat. 

Step 5: Then add 1 leek and 1 Gala apple and sauté until crisp tender, for about 6 minutes. 

                *make sure the leek is diced and only the white and pale parts only

Step 6: Season with salt for taste

Step 7: Scoop the cooled acorn squash flesh into a large bowl. Using a potato masher, mash the flesh until smooth

Step 8: Unwrap the garlic and squeeze the roasted garlic into the squash puree. Then add the remaining 6 tablespoons of butter and mash. 

Step 9: Stir in 1 teaspoon of freshly chopped thyme leaves and season with salt for taste. 

Step 10: Place the mash in a serving bowl and top with apple and leek sauté.
